Strawberry Roll ups!

It's strawberry season, so there's no better time to experiment with new recipes like this! Seasonal produce is higher in nutrients and antioxidants, better for the environment, our wallets and will also help our struggling farmers. Strawberries are also great for you, providing:

  • Vitamin C

  • Folate

  • Fibre

  • Flavonoids like anthocyanins

  • Low GI carbohydrates

These roll ups do take a while to make, but much of the time is hand's free!




Strawberry Roll Ups

Makes: 6 roll ups

Ingredients
1 punnet strawberries
1 tsp monk fruit (or any other sweetener/sugar of choice)
Optional: 1tbsp lime juice

Method
1. Remove stems and cut ends off strawberries.
2. Add strawberries, sweetener and lime juice to blender and process until smooth puree.
3. Line baking tray with baking paper and pour on puree. Ensure mixture is spread thin and evenly.
4. Turn oven to 60-70C and place in baking tray. Bake for 2-3 hours. Monitor occasionally as it will vary with moisture content, but ensure puree is no longer sticky and dried out before removing from oven.
5. Set aside to cool down.
6. Once cool, remove from baking paper and cut into strips. Enjoy!
