Buckwheat puddings are a great alternative to overnight oats for those that can’t tolerate oats. They’re quick, easy and satisfying.
Since finding out I was Coeliac, one thing I always missed was a warm bowl of porridge, and buckwheat became my replacement. It is perfect to keep you fuelled all morning.
Despite sounding like it is anything but gluten free, buckwheat does not contain any wheat and is a great ‘pseudo-cereal’, acting as a wholegrain in gluten free diets. It has a nutty flavour, is high in protein (right after oats), provides energising carbohydrates, good fats, nutrients like zinc, copper and vitamin B1, as well as gut-loving fibres and polyphenols.
All this in less than 450 calories!
Choc-nana Buckwheat Pudding
Ingredients
¼ cup (50g) Loving Earth activated buckinis
1 small banana
4 tsp chia seeds
½ cup unsweetened almond milk
2-3 tsp cacao powder (or more, if you prefer)
2 tsp sugar free maple syrup (can use any sweetener you like however!)
Method
In a blender, add all ingredients but the buckinis. Blend until well mixed.
Pour mixture into container or sealable jar.
Add in buckinis. Seal container/jar.
Leave overnight and enjoy in the morning. Yay!
Notes:
Will keep for up to 3 days in sealed, refrigerated container.
If you prefer a creamier, smoother texture (this one has a little chew as with oats), you can blend all ingredients together before keeping overnight.
To have warm, briefly heat over the stove in the morning.

Banana Bread Buckwheat Pudding
Ingredients

½ tsp vanilla extract
2 tsp sugar free maple syrup (can use any sweetener you like however!)

In a blender, add all ingredients but the buckinis. Blend until well mixed.
Pour mixture into container or sealable jar.
Add in buckinis. Seal container/jar.
Leave overnight and enjoy in the morning. Yay!

Vanilla Berry Buckwheat Pudding
Ingredients- pudding
¼ cup (50g) Loving Earth activated buckinis
1/2 small banana

2 tsp sugar free maple syrup (can use any sweetener you like however!)
¼ tsp cinnamon
Ingredients- berry topping (optional)
1/3 cup frozen berries
1/3 cup unsweetened almond milk
2 tsp chia seeds
1 tsp sugar free maple syrup
Method
In a blender, add all pudding ingredients but the buckinis. Blend until well mixed.
Pour mixture into container or sealable jar.
Add in buckinis. Seal container/jar.
Separately, blend all ‘berry topping’ ingredients. Pour into separate container and seal.
Leave to set overnight. Enjoy in the morning by topping with berry mixture or fresh berries. Yay!
